Mui Borok - The traditional cuisine of  tripura 

The traditional cuisine of the state of Tripura is Mui Borok as it is affectionately called by its people. You will always find one ingredient in the traditional food plate of Tripurian people, Berma. Berma is dried and fermented fish which is surely a Tripura's favourite.





Tripuri people loves to eat different types of fresh vegetables from hill. In their food menu, Bamboo Shoots are one of the traditional dish which they call "Muya" in their Kokborok Language.

The use of dry fish is common in their daily cuisine. Sticky rice which is one of the traditional food of Tripuri People and they eat sticky rice in different ways including Awang Bangwi/ Awang Bwthai,Awang Sokrang, Awang Phanswi, Phap ni Awang and Awang Belep

Awang Bangwi




Awang Bangwi or Awang Bwthai which is one of the traditional food of Tripuri People. This cone shaped rice rolls in Lairu or banana leaves for steam which is loved by Tripuris. Awan Bangwi which is a rice cake prepared by Tripuris including sticky rice,butter or Ghee, reisins, nuts, ginger and onion. Awan Bangwi is the national food of Tripura State






Bamboo Chicken/Pork/Fish

Using bamboo for cooking chicken or pork or fish is popular and traditional way of cooking process of Tripuri People. The process is simple. Marinating chicken or pork or fish with different ingredients and stuff the chicken/pork/fish inside the bamboo with little water. Then cook it for 40-50 min on Charcoal.

                      Gudok 









Gudok is a simple and an indigenous comfort food of Tripura. A traditional gudok recipe calls for the use of berma ( dried and fermented fish) as the main ingredient, along with a combination of fresh vegetables such as sobai/snake beans/chawli/choda, potatoes, green chillies, bamboo shoots and jack fruit seeds.



The dish is cooked without any oil and hence it is considered extremely healthy. Berma will enhance up the salty taste buds on your tongue as it a bit salty and spicy in taste.











Kasoi bwtwi 




Although Kasoi Bwtwi is prepared with Berma, but some prefer it making without the use of fermented fish. This dish is prepared with various green vegetables to give you a punch of healthy dish. Berma- the fermented fish, French beans, chopped onions, Green chilies, a few tofu pieces, garlic cloves, salt and turmeric powder are the main elements of the dish. Tripurians also use the famous khundrupui leaves to add the extended flavour to their delicacy.






Muya Awandru


Bamboo shoots are quite popular in Eastern hills of India and people like to savour them with great zeal. Muya Awandru is a delicacy which is made from bamboo shoots, which are sedulously cooked with rice flour, Berma, and various aromatic spices. The dish is gravy based, thus Tripurian people often like to pair this sapid dish with steamed rice.
